Well one reason that lobsters are so expensive is that they do not reach marketable size very quickly. It takes a lobster 5 – 8 years to weigh a pound, another good reason is that lobster is caught in traps which need a harvest , therefore it takes more time.
Lobsters are rarely grown commercially in fish farms. So almost all the harvest comes from the wild. The leading harvesters are in Maine, Australia and New Zealand.The quantity of lobster has been decreased in last years due to overfishing, yet the demand is in the increase.So, to sum it up in economic terms: low supply and high demand has a pricey result..
